Cavour x Clerget: A Story of Craftmanship

In the heart of Pommard, where the slopes of Burgundy unfold in quiet precision, we spent several days with Thibaud Clerget of Domaine Yvon Clerget. What began as a visit quickly became an immersion into a craft shaped by patience, intuition, and an uncompromising respect for detail.
Walking the vineyards with Thibaud, it became clear that winemaking starts long before the cellar. Every decision, from pruning to harvest timing, reflects a deep understanding of the land. He spoke of each parcel as if it had a personality, requiring careful observation rather than control. This philosophy carried through to the winery, where intervention is measured and deliberate, allowing the character of the fruit and terroir to speak.

For us at Cavour, the parallels to tailoring were striking. Just as a vineyard differs from plot to plot, so too does every client. Measurements alone are not enough. It is about reading nuances, posture, movement, preference. Thibaud’s approach to fermentation and aging echoed the process of constructing a garment. There is structure, but also feel. There are guidelines, but also instinct developed over time.
In the cellar, we observed how small adjustments, a decision on extraction, the choice of barrel, can shape the final expression of a wine. It reminded us of how fabric selection, stitching, and finishing define the outcome of a suit. Both crafts demand restraint. Doing less, but doing it precisely, often leads to the most compelling results.

Our time in Pommard reinforced something we believe deeply. True craftsmanship is not about imposing a vision, but about revealing what is already there. Whether in wine or tailoring, excellence lies in understanding, respect, and the quiet pursuit of refinement.
